The Hawthorne strainer is one of the most recognizable tools behind the bar. What sets it apart from other common strainers is the spring coiled around its edge.
It may look a little unconventional, but it's actually very straightforward to use: set it on the shaker, hold it down, and pour, and it separates your finished drink from the ice and pulp.
Seasoned bartenders know it well, and plenty of them swear by it. But if you're just starting to build out your home bar, understanding how it's built and how to use it will help you get the hang of it much faster.

What Is a Hawthorne Strainer
A Hawthorne strainer is a bar tool used to strain a cocktail after it has been mixed. Usually made of stainless steel, it is easily recognized by its flat, perforated metal plate and the coiled spring that surrounds it.
It is the most widely used cocktail strainer and is often paired with a Boston shaker. To use it, fit it over the opening of the shaker tin and pour the cocktail into a serving glass. The liquid flows between the coils of the spring and through the holes in the plate, while ice, pieces of fruit, and other larger solid ingredients remain in the tin. The result is a clean, smooth drink.
What Are the Parts of a Hawthorne Strainer
Although Hawthorne strainers vary somewhat in appearance across brands, they generally consist of 4 main parts: the metal plate, spring, finger tab, and prongs.
Metal Plate
The metal plate forms the main body of the strainer. It covers the opening of a shaker or mixing glass and prevents ice and solid ingredients from falling into the serving glass.
It usually has an outward-extending handle, a raised finger tab, and 2 or 4 prongs. Most of these features are formed as a single piece with the plate, making the overall structure more reliable and durable.
It's worth noting that although the plate has holes, they are not the primary means of straining.
You can see this for yourself when using a Hawthorne strainer. Unless you tip the vessel at an unusually steep angle from the start, most of the liquid flows through the gaps in the spring and rarely reaches the holes. The holes generally play a supporting role.
For this reason, some models do away with the conventional hole design altogether, using cutouts to give the metal plate a distinctive shape, such as the pineapple strainer or the skull strainer. These styles also give home bartenders more options to match their personal taste or decor.
Spring
The spring is the key part of a Hawthorne strainer.
It flexes to conform to the inner wall of bar vessels with different diameters, and its coils work to catch smaller solids like mint leaves and ice chips.
Because of this, how tightly or loosely the spring is coiled directly affects the strainer's performance.
- The tighter the coils, the smaller the gaps, allowing the strainer to catch finer ice shards and solid particles.
- The looser the coils, the more easily fine particles can pass through.
In most models, the spring is removable. This design offers 3 practical advantages.
- It allows for thorough cleaning between the coils, preventing residue such as fruit pulp or syrup from building up.
- If the spring becomes damaged, it can be replaced on its own without having to buy an entirely new strainer.
- For recipes that call for egg white or cream, the spring can be placed inside the shaker to perform a dry shake.
Springs generally fall into 2 types: half-coil and full-coil.
- Half-coil: This type typically forms a half-circle around one side of the plate's edge and is the more common of the two. Its main advantage is that it allows the gap between the strainer's edge and the vessel to be easily adjusted, giving the user better control over pour speed and straining performance. It's also easier and less effortful to remove for cleaning.
- Full-coil: This isn't a true full circle either, but it wraps closer to a complete loop. It offers better overall contact with the vessel wall, giving a more secure, stable feel during use. The tradeoff is reduced flexibility, making it somewhat harder to adjust the gap or remove for cleaning.
Finger Tab
The finger tab on the metal plate provides a comfortable resting point for your index finger, adding stability and reducing shifting or slipping during use, which makes one-handed operation much easier.
It also lets you smoothly slide the strainer forward or back, opening or closing what's commonly known as the gate, the space between the strainer's edge and the vessel. Fine-tuning this gate lets you adapt your technique to different drinks and situations.
That said, the tab is fixed in position, and since everyone's habits differ, the finger angle that feels comfortable also varies from person to person. For this reason, some models leave out the tab altogether, offering greater freedom for bartenders to grip the strainer however they prefer.
Prongs
The prongs, sometimes called ears, usually number 2 or 4. They rest on the rim of the shaker, helping to hold the strainer in place and keep it from slipping into the tin while pouring.
Some models come with prongs that are pre-bent inward at the factory, so they catch against the vessel's rim and limit movement, reducing the chance of the strainer shifting around during a pour. However, a fixed bend angle may not suit every vessel diameter equally well. This becomes especially noticeable when frequently switching between a shaker and a mixing glass to make different cocktails. For experienced bartenders, simply controlling finger pressure is often enough to achieve the same effect, so this design isn't strictly necessary for them.
This structure also isn't found on every Hawthorne strainer. Some models do away with the prongs entirely, allowing the strainer to be inserted deeper into the vessel to press against the ice for straining. Others widen the sides of the metal plate to serve the same purpose, letting the strainer rest evenly across the top of the vessel.

Do You Really Need a Hawthorne Strainer
If your home bar mainly relies on a Boston shaker, a Hawthorne is the strainer most worth considering. It's practical, reliable, and more than capable of handling most classic shaken cocktails like the Margarita or Daiquiri.
For a cobbler shaker, which comes with a built-in strainer, it's not strictly necessary, but it's still worth having. Its holes tend to be fairly large, and there's no way to adjust how finely it strains. If you want more precise or flexible control over straining, that's where a Hawthorne strainer proves its worth.
It also works well for stirred cocktails made in a mixing glass, such as the Martini or Manhattan. That said, many mixing glasses have a pour spout, and a noticeable gap can form between the Hawthorne strainer and the spout, letting small ice shards slip through. When this happens, you can either rotate the mixing glass so you're pouring from the side without the spout, or switch to a julep strainer, which sits down inside the glass and fits mixing glasses more naturally.
As for recipes with fine ingredients like muddled mint or berry puree, or ones that produce foam from egg white, a Hawthorne strainer alone usually isn't enough to achieve a truly smooth result. In these cases, you'll want to pair it with a fine mesh strainer for double straining. Even so, the Hawthorne remains an essential part of that process.

How Do You Use a Hawthorne Strainer
Regular Use
Straining is a crucial step in making a great cocktail, so learning how to use a Hawthorne strainer correctly is well worth it for home bartenders and beginners alike. Here's a recommended step-by-step process to practice.
- Separate the two halves of your Boston shaker, then fit the strainer over the tin holding the liquid, making sure the spring faces down and sits flush against the inner wall.
- Press your index finger against the tab and wrap your remaining fingers around the tin for a secure one-handed grip.
- Tilt the tin just slightly at first, letting the liquid flow out steadily and strain into the cocktail glass.
- As the liquid pours out, gradually increase the tilt until the tin is completely drained.
- Once you're done, remove the spring and wash it thoroughly along with the metal plate, then let both air dry.
In practice, avoid suddenly tipping the tin at a sharp angle when pouring, or the ice and other solids will slam against the strainer with real force. If your grip isn't firm enough, that impact can knock the strainer out of position, causing splashing or spills.
A safer approach is to let the liquid start flowing first, then gradually tilt the tin to around 30 degrees. It's a process that's all about rhythm. Not only does this pour cleanly, it also gives you better control throughout.
Adjusting Flow Rate and Straining Precision
If you want to speed up or slow down the flow, or achieve a more refined strain, mastering the gate is an advanced technique well worth learning.
- While pouring, pushing the finger tab forward, known as closing the gate, presses the spring tighter until it seals against the vessel, closing the gap entirely. This forces the liquid to flow through the holes in the metal plate instead, which more effectively blocks fine particles from reaching the glass.
- Pulling it back, known as opening the gate, lets the liquid pass through faster. This works well for drinks without fine sediment, or in situations where speed matters more.
Split Pour
Some Hawthorne strainers feature a split-pour design, with two symmetrical, arc-shaped openings positioned above the spring at the front edge of the metal plate. This design splits the liquid into two separate streams while straining, pouring into two glasses at once.
It's mainly used in settings that call for batch output, such as parties, events, or busy commercial bars during peak hours. Bartenders can mix multiple drinks in one batch, then use this technique to cut down on pouring drinks one at a time, boosting overall efficiency. Here's how it's done.
- Place the two glasses side by side, with their rims touching.
- Set the strainer on the shaker tin and push the finger tab forward to close the gate.
- Line up each opening with a glass, then pour slowly.
This way, the liquid first passes through the tightened spring, then flows out through the two dedicated openings on either side. Keeping the tin balanced and pouring at a steady rate helps ensure both glasses end up with roughly equal amounts.
