You've probably had a classic Negroni: deep red, bittersweet and heavy, with orange peel and herbal notes hitting you all at once. For those who love that style, nothing else quite compares. But if you find it too intense, the White Negroni is an answer worth trying.
This variation isn't just a lighter-colored Negroni. It swaps Campari for Suze, and sweet vermouth for Lillet Blanc. That shifts the whole character of the drink: the bitterness is still there, but it's more herbal and restrained; the sweetness steps back, replaced by a white wine-like clean finish — lighter and crisper.
The recipe is equally straightforward, using a 1:1:1 equal-parts ratio that's easy to remember, simple to make, and consistently reliable. Let's get started.

Ingredients
- London Dry Gin (1 oz / 30 ml): London dry is chosen over other gin styles because its juniper flavor is clear and its herbal backbone is clean — so it won't get buried by the other ingredients, and it won't overpower them either.
- Suze (1 oz / 30 ml): It's the key divergence from the classic recipe. Its bitterness is cleaner, without the astringency of orange peel, and instead carries earthy, root-like qualities with a hint of lingering sweetness.
- Lillet Blanc (1 oz / 30 ml): Compared to sweet vermouth, it brings a white wine quality, floral notes, and soft citrus profile. It keeps the drink from feeling too austere against the Suze.
- Lemon peel (1 strip / optional): Used as a garnish; the oils from the lemon also enhance the drink's fresh, bright character.
Tools Needed
- Mixing Glass: For combining the ingredients. You can also build the cocktail directly in a rocks glass.
- Bar Spoon: For stirring the liquid and ice to chill quickly and dilute appropriately.
- Jigger: For accurately measuring the 1:1:1 ratio. Prevents small variations from shifting the bitter-sweet balance.
- Strainer: For straining out the ice, keeping the final drink clear.
Steps
- Prepare a rocks glass and add one large ice cube; set aside.
- Fill a mixing glass about 2/3 full with ice.
- Measure out each liquid ingredient with a jigger and add them to the mixing glass.
- Stir gently with a bar spoon for about 20 seconds. For a rounder, smoother mouthfeel, stir for 30 seconds.
- Strain the drink into the prepared glass.
- Take a strip of lemon peel, hold it over the glass, and give it a gentle twist to express the oils onto the surface of the drink. Rest it on the rim as a garnish.
